Inspired by Dawn Corbin's Lindaville Chicken
Ingredients
2 chicken breasts cooked and shredded
1 Tbsp butter
1 Tbsp coconut oil
1/2 onion, chopped
2 cups chicken broth
2 tbsp Marsala wine
1 cup sour cream
16 oz bag broccoli stir fry
salt & pepper to taste

Directions
Put broccoli stir fry in a microwave safe dish with lid and set aside. In a skillet or fry pan sauté chopped onion in butter & coconut oil until it just starts browning. Add broth and wine. Simmer liquid until reduced by 1/2. Turn off the burner. Put the broccoli stir fry in the microwave and heat per package directions minus about 1 minute. Back to the onions, off the heat add the sour cream. Mix in well. Taste for seasoning at this point and salt and pepper to your preferred taste. Once veggies are done in the microwave drain them well in a colander or strainer. Toss them in the pan of onion and sour cream mixture. Put back on the heat (low to medium low). Mix well. If the chicken is refrigerator cold you may also want to gently heat the chicken in the microwave at this point-just take the edge off. Once it is warm, toss that in the pan with everything else. Stir it all together to mix it well. At this point everything is cooked but we want it to be warmed through. Taste again for seasoning and add salt and pepper as needed.
