Lime Simple Syrup

zest of 3 limes
1/2 cup water
1/2 cup sugar
Bring to a boil sugar, water, and lime zest. Boil until highly fragrant with lime (a minute or two... doesn't take long if you grate the zest finely). Strain simple syrup. Serve with cocktails such as Cocktail With No Name,Tom Collins, or a Midsummer Gimlet.
