Lime Simple Syrup

zest of 3 limes
1/2 cup water
1/2 cup sugar
juice of 1/2 a lime
bring to a boil sugar, water, and lime zest. boil until fragrant with lime (a minute or two... doesn't take long if you grate the zest finely)... add in lime juice, and stir. Strain simple syrup. Serve with cocktails such as Cocktail With No Name or a Tom Collins.
