Ingredients
1 lb ground chicken
1/4 c almond flour (very fine blanched)
1 egg beaten
2 oz mozzarella cheese grated
1 Tbsp fresh chopped dill (or freeze dried!)
salt & pepper
oil for frying (coconut oil & butter is my favorite combo)

Instructions

  • In a bowl, combine ground chicken, beaten egg, almond flour, cheese, dill and seasonings. Mix well until smooth.
  • With a tablespoon, scoop the mixture and form patties.
  • Heat the oil in a frying pan over a medium-high heat and fry the cutlets for 3-4 minutes on each side or until cooked through.

Serve warm with whatever sauce you like. Honey mustard is good, or this awesome homemade Lemon Mustard Sauce (takes less than 5 minutes to mix up!)
