this gets a bit messy in the pan because the cheese will stick.  Sometimes I have to stop and clean the pan so the browned bits don't accumulate too much

Ingredients
1 lb ground chicken
1/4 c almond flour (very fine blanched)
1 egg beaten
2 oz mozzarella cheese grated
1 Tbsp fresh chopped dill (or freeze dried!)
salt & pepper
oil for frying (coconut oil & butter is my favorite combo)

Instructions

  • In a bowl, combine ground chicken, beaten egg, almond flour, cheese, dill and seasonings. Mix well until smooth.
  • With a 1/8 cup measure, scoop the mixture and form patties. They tend to be kinda soft so good to put them on a chilled plate as you work so they don't get too soft.
