Ingredients
1/8 serving arugula
1/4 serving baby kale
a few mint leaves
1/2 avocado
2 tsp mint chutney
1 Tbsp MCT oil
1 roasted red pepper in oil, chopped
Instructions
Mash avocado with MCT oil and mint chutney. Mix dressing with the rest of the greens.
Notes:
This was screaming for some cucumber.
I put this on a coconut wrap and it was amazeballs.
