Roasted Curry Cauliflower

Ingredients
16 oz cauliflower, broken into florets
1/2 onion, peeled, thinly-sliced
4 cloves garlic, sliced
2 tsp fresh or frozen ginger, grated
2 tablespoons lemon juice
2 Tbsp coconut oil
2 teaspoons yellow curry powder
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Directions
Preheat oven to 425°F (220°C). 1/4 sheet pan worked perfectly for this recipe.

in a small saucepan combine ginger, garlic, lemon juice, oil, curry, cinnamon, salt and pepper. Mix well and warm gently until the coconut oil is totally melted and everything is fragrant.

Put cauliflower and onion slices into a bowl big enough for mixing in. Pour the warm oil and spices mixture over cauliflower and onion and mix very well coating all the veggies. Spread onto a baking sheet in one layer. Put into preheated oven to roast. Take out at about 12 minutes elapsed time and stir. Re-check in about 10-12 more minutes. Total bake time will vary between 25-30 minutes.

Serve immediately or at room temperature.
