By way of inspiration from Zula Hyde
Ingredients
3 eggs
2 c. sugar
2 c. peeled grated or chopped zucchini
1 tsp. salt
2 tsp. cinnamon
1/2 c. chopped nuts
1 c. oil
1 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tsp baking soda
Instructions
Beat eggs till foamy. Add oil, sugar, zucchini, and vanilla. Mix well with beater. Sift dry ingredients together, add dry ingredients to egg mixture. Divide butter into two loaf pans. Bake 45 minutes to 1 hour at 325°. better recipe in the church cook book with pineapple in it.
