Orange Cardamom Applesauce

From the kitchen of Alicia Wingren
3lbs apples (I used 6 golden delicious), cored, sliced thin, NOT peeled
1 1/2 c. Water
1 tsp. cinnamon
1 1/2 tsp. cardamom, ground
Zest and juice of 2 oranges
Pinch of salt
1 Tbsp. white sugar (optional)

Simmer all ingredients for ~30 minutes until apples are sufficiently cooked down. Strain to get rid of peel if desired.
