Banana Nut Muffins

From the kitchen of: Dawn Corbin

Sift:
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
& Set aside.

Cream:
1 c. sugar
1/2 c. butter flavored Crisco

Add:
2 eggs (one at a time)

1 1/3 c. mashed bananas
1 c. chopped walnuts

Sift dry ingredients, set aside. Cream sugar and shortening, add eggs one at a time beating after each addition. Add bananas, mix well. Add dry ingredients and mix only until well blended. Stir in walnuts. Bake at 350ºF for 20 to 22 minutes or until toothpick comes out clean. Muffins should be slightly browned on top.
Note: in larger muffin size pans yields 12, in cup cake pans, about 22.
