Cheesy Cauliflower Rice

Ingredients
12oz frozen cauliflower rice
1/4 cup sour cream
2 Tbsp butter
4 oz cheese of your choice, grated or shredded (I used sharp cheddar)
+a little bit more for topping so it browns
dash garlic powder
salt and pepper to taste

Method
1) Preheat oven to 400F
2) Cook cauliflower in microwave according to package directions. Mine said 5 minutes covered on high. Stir and be sure it is hot through. To the cauliflower add the sour cream, butter, cheese, and dash garlic powder. Mix very thoroughly. Taste for seasoning. Add a little salt and pepper as desired. Taste until the salt and pepper balance is good. I like pepper so I probably added 1/4 tsp only a dash or two of salt was needed because the butter and cheese was salty.
3) Carefully transfer cauliflower mixture into a 1 quart baking dish.
4) Bake at 400 for 15 minutes and check to be sure the center is hot with a thermometer. I usually shoot for 150-160. Put it back in the oven if the center is not hot.
5) When the casserole is heated through if the top isn't sufficiently browned switch the oven to convection and bake until the top browns nicely (usually about 5 minutes) I like to watch it close because this seems to vary.
6) Serve hot. Goes great with burgers or hot dogs or anything you might serve Mac and cheese with.
