Best Ever Spinach Salad

From the kitchen of Erik and Alicia Wingren
Ingredients
Grilled steak (great way to use up leftovers!)
6 oz. package of pre-washed spinach
1/2 1lb package of bacon
9 button mushrooms
1 medium sized, vine ripe tomato
Dijon Vinaigrette, recipe to follow

Instructions
Start cooking bacon as desired in oven or fry pan. While the bacon is cooking put spinach in bowl. Slice cold grilled steak and mushrooms. Add to spinach. Slice tomato and leave off the salad until right before serving. (It seems to wilt the spinach.) Once bacon is cooked I like to use tongs to hold it when it's hot and cut it in pieces with a pair of scissors right into the salad. Add tomato and toss the salad. Serves about 3 people. Cottage cheese on the side makes a fantastic meal out of this.

Dijon Vinaigrette recipe:
¼ c. Good Seasons Italian dressing (already prepared per package directions)
1 Tbsp. olive oil
1½ Tbsp. Dijon mustard
2 Tbsp. mayonnaise
black pepper to taste

Whisk to combine and toss spinach to coat.
