Wilted Spinach

bacon grease
Onion
Mushrooms
Balsamic vinegar
Pepper
Salt
Spinach

Cook the onion in bacon grease until its translucent. Add mushrooms, salt, and pepper, and cook down... a lot. Add a splash of balsamic (maybe 1-2 tsp.) and more salt and pepper to taste. I like a little sauce so add more bacon grease at this point if desired. Turn off heat, toss in spinach until it is nicely coated and wilted.
