Sweet Potato Muffins

Ingredients
1 cup mashed Sweet Potatoes
2 eggs
1/2 cup unsweetened Coconut milk
1/2 cup Maple Syrup
I substituted Honey
4 Tbls. butter melted
1 1/2 Teaspoons Vanilla
1 1/3 cup Flour
2 teaspoons Baking powder
2 teaspoons Pumpkin Pie Spice
1/2 teaspoon salt
1/2 c. shredded coconut, divided
1/2 cup chopped pecans
Pecan halves for top

Directions
Preheat oven 400 degrees
Line muffin cups with papers
Whisk sweet potatoes, eggs, coconut milk, maple syrup, butter, & vanilla in a large bowl
Mix dry ingredients together and add to wet ingredients.
Stir in 1/4 cup of shredded coconut & chopped pecans
drop into muffin cups.
Sprinkle with remaining coconut and top each with a pecan half, press down slightly,
Bake 20 to 22 minutes or till tooth pick comes out clean.
