Ingredients
8oz (by weight) Mozzarella cheese, grated - plus some for topping
2oz (by weight) Parmesan, grated
2 egg yolks
1 (15 oz.) ctn. Ricotta cheese
1 1lb pkg. baby spinach, sautéed, cooled, and well drained (or one 10oz package frozen spinach, thawed, drained)
Kosher salt, ground black pepper (to taste)
2, 7oz pkg. gluten free manicotti, I used Jovial
Fresh basil (optional)
1 28 oz jar spaghetti sauce, I prefer Rao’s marinara
