Ingredients
chicken wings
baking powder
Method
Pat wings dry, lay out on baking sheet or large platter
Put a few spoonfuls of aluminum free baking powder into a fine mesh strainer or sifter if you have one
Dust wings with baking powder
Timing and temp:
375°F for 12 minutes
Flip
375°F for 12 minutes
400°F for 5 minutes
When batch-processing, keep wings warm in 190°F warming oven.
Toss in sauce just before eating.
Sauce method
1/2 cup butter
1/2 cup hot sauce (more or less to your taste) Frank's Wing Sauce is my preferred
1 tablespoon honey
Salt pinch
