From the kitchen of: Dawn Corbin
1 c. semi-sweet chocolate chips, melted and set aside to cool
1 8 oz. pkg. cream cheese, softened
1/4 c. powdered sugar
1/3 c. seedless raspberry jam, All Fruit or Simply Fruit works best
Beat Cream Cheese till smooth and fluffy. Add powdered sugar, beat to mix, add raspberry jam, mix well. Add melted chocolate last. If using for candy filling, put thin layer of melted chocolate in molds chill slightly (about 15 minutes in refrigerator), gently add filling smoothing slightly. cover with another layer of melted chocolate. Chill for about 1 hour then tap mold to release candy. shave edges for a better looking product. Best with dark chocolate on outside.
