From the kitchen of: Dawn Corbin

1 1/2 lb. potatoes, peeled & diced
3 slices bacon, cut into 1 inch pieces
1 medium onion, diced (approx. 1/2 c.)
1/2 c. celery, finely diced

1 Tbsp. flour
1 Tbsp. sugar
1 tsp. salt
1/2 c. water
1/2 c. vinegar

Pare and dice potatoes, boil until tender, drain, and set aside. Fry bacon, remove from grease, drain on paper towel. Cook onions and celery in bacon grease until tender. Drain and save bacon grease, put 2 tablespoons back into pan. In quick shake blend flour, sugar, salt, water, and vinegar. Add to bacon grease, onions and celery, cook until thick and bubbly, pour over potatoes. Reheat before serving. Can be served cold.

Great for parties and picnics just keep it hot on a warmer.
