From the kitchen of Dawn Corbin
Ingredients
4 qt. cucumbers, chopped
8 c. onion, chopped
4 red bell peppers, chopped
4 green bell peppers, chopped
1 c. salt
8 c. sugar
1½ qt. vinegar
4 Tbsp. celery seed
4 Tbsp. mustard seed
4 Tbsp. corn starch
Directions
Combine chopped vegetables in large bowl or tub. Sprinkle with salt. Cover with cold water. Let stand 2 hrs. Drain thoroughly: press out excess liquid. Combine sugar, vinegar, and spices. Heat to boiling, add vegetables. Simmer 10 minutes. Add corn starch mixed with a small amount of liquid, stir as you add. Stir an additional 5 minutes. Pack in hot sterilized pint jars. Process 10 minutes. Hot water bath.
