appetizers

Deviled Eggs -- Alicia Style!

Ingredients
6 hard-cooked eggs
1 Tbsp onion, chopped fine
2 Tbsp red bell pepper, chopped fine
1 Tbsp dill pickles, chopped fine

Directions
homemade Mayonnaise to taste (I think I used about 1/4-1/2 c)
salt
pepper
smoked paprika
salt-free seasoning of your choice (we like Penzeys Mural of Flavor)

Combine everything but the salt and egg yolks and mix well. Mash egg yolk separately to get a nice even consistency. Combine yolks with other ingredients. Taste it and add salt until it tastes right.
Top egg white "shells" with egg yolk mixture until all egg whites have been used. Top with a sprinkling of smoked paprika, or Penzeys Forward

Notes: could use some mustard... dash of ground or maybe some prepared yellow
