This isn't much of a recipe but more just my notes.
Ingredients
chicken wings
baking powder (aluminum-free)
Method
Pat wings dry, lay out on baking sheet or large platter
Put a few spoonfuls of aluminum-free baking powder into a fine mesh strainer or sifter if you have one
Dust wings with baking powder, you want to coat them and shake off any excess -- don't be too worried about over-doing it, this step really helps get the skin crispy
Air fryer timing and temp:
375°F for 12 minutes
Flip
375°F for 12 minutes
400°F for 5 minutes
When batch-processing, keep wings warm in 190°F warming oven.
Toss in sauce just before eating.
Sauce method
1/2 cup butter
1/2 cup hot sauce (more or less to your taste) Frank's Wing Sauce is my preferred
1 tablespoon honey
Salt pinch
