3 1/2 cups flour
2 2/3 cup sugar ( I substituted Coconut Palm Sugar)
2 tsp. Baking Soda
1 tsp. Salt
1 tsp. Baking Powder
1 1/2 tsp. Cinnamon
1 tsp. Ginger
1/2 tsp. Cloves
4 eggs
2 cups mashed Sweet potatoes
2/3 cup Canola oil
2/3 cup 2% milk
1 1/2 cup raisins
1 cup chopped walnuts
Directions
Preheat oven to 350 degrees. In a large bowl, whisk the first 8 ingredients set aside. In another large bowl, whisk eggs, sweet potatoes, oil, and milk until well blended. Add Flour mixture; stir just until moistened. Fold in Raisins & walnuts. This wil make a 9X5 inch loaf of bread and 15 muffins, or 24 muffins. Bake Bread 40 to 45 minutes or till toothpick comes out clean. Muffins about 20 minutes or till toothpick comes out clean. I had 24 muffins and enough batter leftover to make a small loaf. I baked the loaf 35 minutes and it still wasn't done in the middle when it cooled I will let it go the full 45 minutes next time.
