From the kitchen of: Dawn Corbin
Ingredients
3 eggs
4 medium potatoes
1 medium onion
1 tsp. lemon juice
½ c. flour
1 tsp. salt
½ tsp. pepper
Instructions
Grate potatoes and onion. Add lemon juice to this mixture and set aside. Beat eggs; add flour, salt, and pepper; mix well. Add to potato mixture; stir well.
Drop by large spoonful into hot oil. Brown well on both sides; quickly drain on paper towel. Serve immediately while hot!
Serve with bacon, sour cream, and applesauce.
