Ingredients
6-8 slices bacon cooked and cut-up
3 Tbsp. bacon grease
1/4 tsp. minced garlic
1 medium onion, chopped
1 large celery stalk, chopped
1 large carrot, sliced or diced
12 c. water
1 lb. lentils washed & sorted
1 tsp. or 1 cube chicken bouillon
2 Tbsp. parsley flakes
1 Tbsp. salt
1/2 tsp. pepper
1/4 tsp. Thyme
15 oz. can diced tomatoes
Instructions
Cook bacon, set aside. In bacon grease sauté garlic, onion, celery, & carrot. Simmer 10 minutes. Add water, lentils, bouillon, parsley, salt, pepper & thyme. Simmer over low heat for 1 hour covered. Add tomatoes and simmer 15 minutes more uncovered.
Note: Watch for salt content in tomatoes some brands are a lot higher than others.
