Ingredients
1 medium to large ripe banana
1 egg
2 egg whites
1 tsp vanilla extract
dash cinnamon
coconut oil for coating pan
Directions
Set oven to 350°F
Grease 9x11" pan with coconut oil
Mash banana with a fork or potato masher. Whisk egg and whites, combine with banana. Add vanilla and cinnamon and stir to combine. Pour mixture into greased baking dish. Bake for 25 minutes or until entirely set.
