1 Tbsp onion, chopped fine, green onion works great! If you don't have onion extra pickle works well!
2-3 Tbsp red bell pepper, chopped fine
1-2 Tbsp dill pickles, chopped fine
2 Tbsp fresh parsley, chopped

homemade Mayonnaise to taste (I think I used about 1/4-1/2 c)
6 hard-cooked eggs
salt
pepper
smoked paprika, or Penzey's Forward

Combine everything up to the mayo. Peel eggs, halve them like you're making deviled, put all the yolks in a bowl. Mash egg yolk separately to get a nice even consistency. Combine yolks with first bit of ingredients. Taste it and add salt, pepper, and paprika to your liking.
Chop egg whites and combine with yolk mixture. I don't usually use all the egg whites.
Enjoy!
Note: If you have leftover whites, you can serve the empty (un-chopped) egg whites with other stuff in them... fish eggs, lunch-meat and cheese, mayo, cocktail sauce, & shrimp, use your imagination!
