Combine egg yolk, cider vinegar, apple juice, dijon, paprika, and salt in immersion blender beaker.  Blend until combined.  Slowly add the oil while blending.  As the mayo thickens the beaker tends to like to spin with the blender.  You may want to have a friend help you with this for that reason.  Enjoy with your favorite meats, use as a dressing for coleslaw, or add it to Italian dressing to make it creamy!  This is a zippy mayo.  A good substitute for that Miracle Whip.<br>

Mayonnaise recipe from The Primal Blueprint Cookbook

Ingredients
4 egg yolks
1/4 c. cider vinegar
2 Tbsp. apple juice (w/o sugar added!) <-- this was my tweak from Mark's original recipe
2 tsp. Spicy brown mustard (I like this one)
double dash paprika
double pinch of salt
2 c. light olive oil (we like Star brand!)

Directions
Combine egg yolk, cider vinegar, apple juice, spicy brown, paprika, and salt in quart canning jar. Blend with immersion blender (I recommend this one) until combined.
