I really love this salad made into a [https://www.iherb.com/pr/nuco-organic-coconut-wraps-original-5-wraps-14-g-each/86083 coconut wrap].  Thinly slice up some cucumber on the bias and lay them down on the wrap, spread out the tossed greens and herbs, and finally top with any other veggies you might have around.  In the photo I added some red bell pepper and green onion.  Use whatever you have that you might like.  Thin apple slices provide a nice sweet crunch.

Today 13 August 2022: kale is not necessary. Can use any lettuce or green. Today I used mixed greens. discovered chopped dried apricots and a small amount of cojita cheese is a lovely addition to this salad with mixed greens, cucumber, red bell pepper, and fresh chopped mint.
This was screaming for some cucumber.<br>

Kalecado Salad Wrap

From the kitchen of Alicia Wingren
Ingredients
35 grams baby kale (about 1/4 of a serving)
18 grams rocket (about 1/8 of a serving)
a few mint leaves
1/2 avocado
2 tsp all-in-one chutney (or whatever chutney you like!)
1 Tbsp MCT oil
1 roasted red pepper in oil, drained well and chopped

Instructions
Mash avocado with MCT oil and chutney. Mix dressing with the the greens and mint. Enjoy as a salad or put it on your favorite wrap or sandwich delivery device.

I really love this salad made into a coconut wrap. Thinly slice up some cucumber on the bias and lay them down on the wrap, spread out the tossed greens and herbs, and finally top with any other veggies you might have around. In the photo I added some red bell pepper and green onion. Use whatever you have that you might like. Thin apple slices provide a nice sweet crunch.
