Preheat oven to 425°F (220°C).  1/4 sheet pan worked perfectly for this recipe.<br>

in a small saucepan combine ginger, garlic, lemon juice, oil, curry, cinnamon, salt and pepper.  Mix well and warm gently until the coconut oil is totally melted and everything is fragrant.<br>

Put cauliflower and onion slices into a bowl big enough for mixing in.  Pour the warm oil and spices mixture over cauliflower and onion and mix very well coating all the veggies.  Spread onto a baking sheet in one layer.  Put into preheated oven to roast.  Take out at about 12 minutes elapsed time and stir.  Re-check in about 10-12 more minutes. Total bake time will vary between 25-30 minutes.<br>

Serve immediately or at room temperature.<br>
