4 qt. cucumbers, chopped<br>
8 c. onion, chopped<br>
4 red bell peppers, chopped<br>
4 green bell peppers, chopped<br>
1 c. salt<br>
8 c. sugar<br>
1½ qt. vinegar<br>
4 Tbsp. celery seed<br>
4 Tbsp. mustard seed<br>
4 Tbsp. corn starch<br>

Combine chopped vegetables in large bowl or tub.  Sprinkle with salt.  Cover with cold water.  Let stand 2 hrs.  Drain thoroughly: press out excess liquid.  Combine sugar, vinegar, and spices.  Heat to boiling, add vegetables.  Simmer 10 minutes.  Add corn starch mixed with a small amount of liquid, stir as you add.  Stir an additional 5 minutes.  Pack in hot sterilized pint jars.  Process 10 minutes.  Hot water bath.
