6 hard-cooked eggs<br>
1 Tbsp onion, chopped fine<br>
2 Tbsp red bell pepper, chopped fine<br>
1 Tbsp dill pickles, chopped fine<br>

homemade [[Mayonnaise]] to taste (I think I used about 1/4-1/2 c)<br>
salt<br>
pepper<br>
smoked paprika<br>
salt-free seasoning of your choice (we like Penzeys [http://www.penzeys.com/cgi-bin/penzeys/p-penzeysmuralofflavor.html Mural of Flavor])<br>

Combine everything but the salt and egg yolks and mix well.  Mash egg yolk separately to get a nice even consistency.  Combine yolks with other ingredients.  Taste it and add salt until it tastes right.<br>
Top egg white "shells" with egg yolk mixture until all egg whites have been used.  Top with a sprinkling of smoked paprika, or Penzeys [http://www.penzeys.com/cgi-bin/penzeys/p-penzeyspenzeysforward.html Forward]<br>
